Chocolate Cheesecake For Two

Hi everyone! I'm so
happy to be guest posting for Tammy today!
I love her blog (who wouldn't!) so getting to post here is super exciting.
To quickly catch you up to date, I LOVE baking and I also LOVE any and all holidays so when Tammy asked me to write a post about Valentine’s Day baking it couldn’t have been better.  Since money is a tad tight (I’m in my 7th year of school…uh can we say debt?) I tend to lean on
cooking/baking to shower my husband with Valentine's day inspired love (awww). A few years ago I tried this dessert recipe for the first time and it was a big hit with the hubby.  So for anyone out there
who has a cheesecake loving fella of their own, I thought I’d share the recipe.  I’ll be posting the original recipe (check it out here!) but I do make some modifications so I’ll add those in as well.

CHOCOLATE CHEESECAKES FOR TWO!


what you need:

60 grams cream cheese, softened (this is about ¼of a regular brick of cream cheese)
1 square semi-sweet chocolate, melted
1 Tbsp. sugar
½ cup thawed Cool Whip
2 Oreo cookies (I use Oreo crumbs; it tends not to come out quite as thick)

to make it:

1. Beat cream cheese, melted chocolate, and sugar in medium bowl until blended (p.s - the smoother you can get it, the easier it is to pour into the muffin trays)
2.  Stir in Cool Whip.
3.  Line 2 cups of a muffin tray with a paper liner.
4.  Place 1 cookie in each or a layer of cookie crumbs.
5.  Top with cream cheese mixture.
6.  Refrigerate 2 hours.

   Once the cheesecakes are set you can pop them out of the trays and decorate them as you wish!  
My favourite thing to do is sift some cocoa powder over the top of them and then with a little heart cut out (a small heart shaped cookie cutter would work too!) I sift some icing sugar on top of that to get that cute lil heart!   When I serve them to D (my husband) I also drizzle some chocolate fudge on the plate, slice up a couple yummy strawberries and put a little dollop of Cool Whip.  Yum!!!
 

Ladies it’s super easy, super yummy and any one you make this for will definitely want to be your Valentine.  It’s also really easy to double or triple up the recipe (beware…if you make them, you
will eat them) and there are tons of ways you could personalize them.
