Pumpkin Chocolate Chip Brownies

I think we can all pretty much agree that
1) Pumpkin is fantastic.
2) Pumpkin + chocolate = even more fantastic
3) Brownies are always a good thing.

These pumpkin chocolate chip brownies are clearly a very good thing

Last week I was searching Pinterest for a yummy fall dessert to bring to a work pot luck, and came across this recipe for Pumpkin Chocolate Chip Brownies by Pennies On A Platter. The brownies were really easy to make and they disappeared off of the dessert table so fast.

Just a note: These brownies have more of a cakey texture, and less of a brownie texture but are mightly delicious. (Uhm I think I just typed the words "mighty delicious". Forgive me? =P)


Yield: 24 small brownies

1/2 cup pumpkin puree
1 whole egg
2 egg whites
1 tbsp vegetable or canola oil
1 cup flour
1 tsp baking powder
1 tsp unsweetened cocoa powder
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/4 tsp salt
2/3 cup brown sugar, packed
1/2 cup semisweet chocolate chips
1. Preheat oven to 350˚F.  Line an 11″- x 7″-inch pan with parchment paper.
2. In a large bowl, combine pumpkin puree, eggs and oil until smooth.  Set aside.
3. In a separate medium bowl, mix together the flour, baking powder, spices, salt and brown sugar.  Add to the wet ingredients and mix until thoroughly incorporated.  Stir in the chocolate chips.
4. Pour into prepared pan and spread evenly.  
5. Bake for 15 – 20 minutes or until passes toothpick test.  
6. Cool completely before cutting.

These sounds fabulous and unusual. This having been my first October in the USA, I've been fully converted to the "mighty delicious" pumpkin spice trend.

Can't wait to try these! I have a weakness for anything pumpkin...add chocolate to the mix and I get giddy.
